At the request of my husband, I ventured to make Scottish Shortbread this weekend. I found this recipe at allrecipes and really, it couldn't be ANY easier. I couldn't believe how much butter it called for, until of course, I ate a piece. Holy moly!
Scottish Shortbread (from AllRecipes)
Makes about 2 dozen
Ingredients:
2 cups (4 sticks) salted butter softened
1 cup packed brown sugar
4 1/2 cups all-purpose flour
Directions:
Preheat oven to 325. Cream together butter and brown sugar. I dropped these two in the kitchenaid and walked away for a couple of minutes. Too easy! Slowly add 3 1/2 cups flour. Mix well.
Sprinkle rolling surface with the remaining flour. Knead for 5 minutes, adding enough flour to make a soft dough. Roll to 1/2 inch thickness. Cut into 3x1 inch strips. Prick with fork and place on ungreased baking sheets. Bake at 325 degrees F for 20 to 25 minutes.

That is quite a buttery recipe! I bet it's tasty though, and so pretty in the snowflake tin. Where'd you get all those cookie tins anyway? :)
Thank you! You should have grabbed a piece. If you want to try it, let me know and I can bring you one tomorrow. Though I personally like the biscotti better (recipe to come later).
Because of the amount of tins I had to buy, I am ashamed to say, I bought them at Wal-Mart. They're long and narrow and were perfect for biscotti and shortbread.

Ooh... I love shortbread! I usually just buy Walkers seeing as I'm not much of a cook/baker.
The shortbread looks great! I too just resort to buying Walkers, but it's because I've yet to find a specific shortbread recipe that I've liked. With the amount of butter in this recipe, I think this might just be the winner! Thanks for sharing :)
