No brainer taco salad

Last night I set out to make my guacamole and discovered, upon slicing open my first avocado, that I'm going to need to wait a few more days. I saved this avocado by cubing it, tossing it with some lime and salt and throwing it onto a taco salad.

Sometimes dinners like this are just comforting in that they are non-events. Clean up is minimal. Effort is minimal and flavor is not compromised. I don't think I've ever made two quite the same, but here's how it went down last night.No Brainer Taco Salad
Makes 4 servings
Ingredients:
1 lb ground turkey browned and cooked with taco seasoning (served warm)
1 can refried beans doctored with some chili powder, cumin, garlic powder and salt (served warm)
1 head romaine lettuce chopped
1 can of sweet corn, drained and tossed with a little salt
1/2 can of small black olives
12 grape tomatoes sliced in half
4 thin slices of red onion
1/2 cucumber
1 firm avocado, cubed and tossed with lime juice and salt
about 30 chips
shredded cheese, salsa and sour cream to individual liking

Directions:
Assemble on plate. Wow that was tough!

I put all my cold ingredients around the perimeter. Then I fanned out my chips and covered with beans, then meat and a tiny bit of shredded cheese. This worked out well and kept the cold ingredients from getting wilted by the warm ones.

Looks so scrumptious Jeni. Can you believe I never made anything like this before? I should make an effort to try humble and delicious salad, like your taco salad.

That's so funny, cause we had almost the same meal last night. I had so much left over from lunch cause the kids didn't like it (browned turkey, 1/2 bag of frozen corn, pepper & broccoli mix and taco seasoning on top of rice) so I used that as filling between two flour tortillas. I added hot sauce and a medium spicy bean/cheese dip and shredded cheese and a little bit of sour cream. It was definitely not your usual quesadilla, but it was pretty good! :) No fresh veggies though, that would have been nice!

Food like this is just easy and completely forgiving in how you improvise. I'm glad I'm not the only one who throws stuff together and hopes for the best!

Oh yum! I'm making taco salad tonight. I usually use ground turkey too, but I made steak last night and realized I had a little more than we'd eat so I cooked it separately seasoned with taco seasoning. Your picture made me so excited for dinner!

A great 'throw anything in the pot' meal...you can just grab whatever you have in the kitchen! Love a good taco salad.
