Anything with spinach in it is healthy regardless of any other ingredients.

This one makes me smile cause I add spinach to the kids' brownies. hehe
Also I meant to tell you that I tried the parmesan tilapia that you've linked to but I didn't have time to look at the recipe and all I remembered was mayo and grated cheese...they didn't come out that great, pretty greasy actually :(
I love reading your blog and I wish I lived near Durham so I could visit all these places you go to too!

Hmm yeah the parmesan tilapia has only about 1tbs of mayo, 1 tbsp of butter, a healthy amount of lemon juice, garlic powder, celery salt and some shredded parm. Give it another shot per recipe. I promise it's not greasy at all!
