Risotto

I recently purchased some arborio rice and am wanting to try my hand at making risotto. Anyone have any beloved recipes/flavor combinations they want to share or tips on cooking? Otherwise it's a-googling I shall go!

I like peas & mushrooms or asparagus. I find that I don't have to stir it constantly like most recipes say ... I can usually work on the rest of dinner or do other things in the kitchen & just give it a stir when I walk by, making sure that the liquid doesn't dry out. Do have the broth heated up first, though!

Awesome Min, thanks. Have you ever taken the short cut for broth and used boullion and water? I do that all the time in recipes and especially for soup and it works well!

Yep, all the time! It works fine for me, but I'm hardly a "gourmet" cook. ;)

Awesome because honestly I don't keep quarts of stock in the pantry. It's just not practical haha.
